2.25 to 4.5 cups of gluten free flour (i used my blend) or spelt (3 cups if using spelt) or whole wheat flour
1.25 cups of warm water
2.25 teaspoons of active, quick dry yeast
1 teaspoon of maple or coconut sugar
1 tablespoon of honey
1 tablespoon of extra virgin olive oil
1.5 teaspoons of salt
TIP: Depending on the type of flour you use, you may need to add more flour to the mixture in order to get the right consistency. It should not stick to the sides of the bowl. If it does, you may need to add more flour. Add 0.5 cup at a time.
4) Add the rest of the flour and mix until the dough forms and no longer sticks to the side of the bowl.
5) Kneed the dough and place in a greased bowl and cover.
6) Let it sit for at least 30 mins.
TIP: You can freeze the dough as well in a freezer bag. Make sure you remove all the air out of bag before putting it in the freezer. You can keep it for up to 3 months.
