2 cups of all purpose flour or gluten free all purpose flour (i used my own blend of gluten free all purpose flour)
1 cup of shredded coconut
1 tsp of baking powder
3/4 cup of maple or coconut sugar
3/4 cup of water
2) Mix coconut and baking powder in food processor with dough hook
3) Add sugar and water and mix again.
5) Remove and form a loaf.
6) Wrap in foil and bake for about 45 mins or until toothpick inserted comes out clean.
